Our sundays are very lazy lately. I am listening to the latest album of one my favourite bands called Malajube. My good friend Pier-Luc from Montréal recommended them a couple of years ago. They were in Germany in 2007 and so I saw them live and totally fell in love with their music. If you like francophonic indie rock you should definitely check them out.
I bought a lot of colourful vegetables and fruits yesterday and so today I made a summer salad with baby spinach, pepper and figs. I love colourful salads and I really think there is are true connection between enjoying the colour composition and the taste of a salad.
What you need for three people:
200g baby spinach
1 red pepper
100g ricotta cheese
1 tablespoon dijon mustard
1 tablespoon cane sugar
Pepper and salt
Wash the baby spinach and arrange it on the plates
Add pepper and avocado, cut into pieces and crumble the ricotta cheese an top
Quarter the figs and put them into the oven on 180° for ten minutes
Arrange the figs on the salad
Wash the fresh herbs, chop them and spread them on top of the salad
For the dressing combine olive oil and balsamic vinegar (1:4)
Add dijon mustard,sugar, lemon zest, pepper and salt and stir well
