Baby spinach salad with figs and lazy sundays

Our sundays are very lazy lately. I am listening to the latest album of one my favourite bands called Malajube. My good friend Pier-Luc from Montréal recommended them a couple of years ago. They were in Germany in 2007 and so I saw them live and totally fell in love with their music. If you like francophonic indie rock you should definitely check them out.

I bought a lot of colourful vegetables and fruits yesterday and so today I made a summer salad with baby spinach, pepper and figs. I love colourful salads and I really think there is are true connection between enjoying the colour composition and the taste of a salad.

What you need for three people:

  • 200g baby spinach
  • 5 figs
  • 1 red pepper
  • 1 avocado
  • Fresh basil
  • Fresh mint
  • 100g ricotta cheese
  • Olive oil
  • 1 tablespoon dijon mustard
  • 1/2 lemon
  • Balsamic vinegar
  • 1 tablespoon cane sugar
  • Pepper and salt
  • Steps:

  • Wash the baby spinach and arrange it on the plates
  • Add pepper and avocado, cut into pieces and crumble the ricotta cheese an top
  • Quarter the figs and put them into the oven on 180° for ten minutes
  • Arrange the figs on the salad
  • Wash the fresh herbs, chop them and spread them on top of the salad
  • For the dressing combine olive oil and balsamic vinegar (1:4)
  • Add dijon mustard,sugar, lemon zest, pepper and salt and stir well
  • Pour the dressing over the salad and enjoy!
