Bruschetta with homegrown tomatoes

We have so many tomatoes – it’s crazy! Despite the bad weather and all the rain in the past weeks, our balcony looks like a tomato garden. I picked all the very red ones on Saturday and today there are new red ones ready to be picked again. I love it! And the summer is back!

Bruschetta is such a great snack and perfect to make the best of the full flavour of fresh tomatoes. If you really love garlic, you should rub the warm baguette slices with garlic and olive oil. It is very tasty but also very intense. We made the Bruschetta on Saturday around lunch time and the whole kitchen still smelled like garlic on Sunday night. But it was very tasty.

Fresh tomatoes smell so nice. I really love the smell of fresh tomatoes. When I buy tomatoes I always judge by the smell as this is a very good indicator of quality and freshness of the fruits. Oh, I love tomatoes!

What you need:

  • 1 Baguette
  • 400g tomatoes
  • 2 small onions
  • A good handful of fresh basil
  • 4 garlic cloves
  • Pepper and salt
  • Olive oil
  • Steps:

  • Preheat the oven to 180°C
  • Chop the tomatoes, onions and basil and mix well
  • Use a garlic press to add the garlic
  • Season with pepper and salt
  • Put baguette slices into the oven for 5-8 minutes max
  • When you take the baguette slices our of the oven, drizzle olive oil over the warm slices
  • Drain the tomato mixture and then arrange it on the baguette slices
