Quick Yoghurt Bread with Sesame and Pumpkin Seeds

After a lot of trial and error I became quite decent at baking bread. This recipe is so great because the dough does not have to rest for hours. So the bread is quickly ready.

The yoghurt makes the bread taste light and fluffy. I added sesame and pumpkin seeds for a nutty flavour. The bread goes very well with cheese. I think this is my favourite homemade bread so far!

It was the second time in the past week we didn’t get a table at a local tapas bar. So we decided to make tapas ourselves last night. We had a large variety of little colourful dishes: cheese, chorizo, gambas al ajillo, stuffed mushrooms..I love tapas. My favourite tapas bar in Germany is in Frankfurt: Casa Pintor. It is a small, hidden place with very authentic food. If you are in Frankfurt you should definitely check it out.

What you need:

  • 250g spelt flour
  • 200g plain yoghurt
  • 1 small egg
  • 2 tablespoons baking powder
  • 50g pumpkin seeds
  • 50g sesame seeds
  • 1 teaspoon salt

  • Steps:

  • Preheat the oven to 180°C
  • Whisk together all the ingredients in a bowl
  • Save some pumpkin and sesame seeds and put them aside on a plate
  • Knead the dough well and then bring the dough ball into an oval shape
  • Wet the upper surface with a bit of water and then gently roll the dough over the seeds
  • Place on a baking tray and bake for about 40 minutes

      Just made this – delicious! I was assigned the last minute duty (a.k.a. joy for my part) to make dinner for my parents tonight, and my parents (high-maintenance eaters…nothing healthy works for them) really enjoyed this bread. I whipped it up along side beef tikka masala and rice, and it worked wonders as a substitute for naan. Indeed, so well that it is a delicious bread in its own right, one I will continue making! My mother, who absolutely hates yoghurt, never suspected a thing and all in all it took less than 40 minutes, both prep and baking time! Easy and perfect for those days when time is a luxury you don’t have. Thank you so much for making my life both trouble and yeast free!

      Oooh I hope I can become as proficient as you in making bread! I haven’t made anything that I’m proud of yet… gotta try this one out. I love yoghurt and I love pumpkin seeds…sounds like a great match for me!
