Spring onions, tomatoes & red lentils with Indian spices

The recipe for this Indian style dish is from a brochure I picked up at Whole Foods Market in London some time ago. The brochure gives ideas for healthy dishes with whole grains. Quite informative.

I don’t cook with lentils so much, because I don’t know so many good recipes. That’s why I follow quite a few vegeterian or vegan food blogs to learn more, because lentils are so delicious and rich in protein.

This dish is with garam masala, an Indian spice blend with cardamom, pepper, cinnamon and cloves. Garam masala smells so nice, a little bit Christmassy in the middle of summer..well, summer…it has been raining for the last two weeks. I am really looking forward to go to Sicily.

What you need for two people:

  • 1 big red onion
  • 3 thinly sliced garlic cloves
  • 1 teaspoon garam masala
  • 3 big tomatoes
  • 1 bunch spring onions
  • 200g red lentils
  • Steps:

  • Bring 100 ml water to a simmer, add red onion and garlic, cook for five minutes
  • Stir in garam masala, tomatoes with their juice, add 150 ml water and bring to a boil
  • Reduce to medium heat and stir in spring onions, previoulsy washed and cut into slices
  • Meanwhile cook the lentils until tender for around ten minutes
  • Strain, and add lentils to the stew
